Fresh Baked Coho Salmon

This easy recipe can be prepared with the fillets you take home directly out of the bag. No additional meat prep work will be necessary when you bring you fish home for this recipe.  And it can be prepared with items you most likely already have at home or can grab quickly at your local Kwik Trip on the way home.

Ingredients:

  • Coho fillets, 2 will typically feed up to 6 people
  • Yellow onion
  • Fresh rosemary (optional but adds a great flavor)
  • Lemon
  • Salt and pepper
  • Butter

Lean and lay fillets on a cookie sheet, cover the cookie sheet with aluminum foil for easier cleanup. Slice Onion, lemon and butter into 1/8” slices.

Stack onion slice, then lemon slice, then butter slices onto the fillets. Usually takes 3 stacks to cover the whole fish. Lay rosemary over the top of the stacked fillets. Bake on 375 for 40 minutes or until juices are clear and meat is firm and flaky. Bake time will vary with thickness and size of fillets.

We just wrapped up what is our most epic trip of the year.  Like we do every year, we took a select group of clients down to our friends in Arkansas to beat up on the snow geese.  As usual, no one was disappointed.  We had mega spins that created big piles and big smiles.

SCI Wisconsin

SCI is one of the causes that we believe in. They fight hard for hunters and hunter’s rights, and they fight hard for their guides and their long term stability through patronage and great customer/guide relationships. We are proud to be able to work with SCI to provide 4 trips this year for their giveaways and auctions. As in the past we give one hunt per evening away to the veterans and three of their guests.

We just wrapped up our Wisconsin season and it was amazing. We had a lot of great times with our customers this year. We had several “first duck” and “first species” hunts and as always made people smile with the addition of their bucket list old squaw or bucket list long-tailed duck.

January Captain’s Log

As I sit here and wrap up our days in Cape Cod, I find myself thinking of the amazing history and landscape of this region and all that I was able to experience on my visit this year. As always, we had great hunting and will have memories to last the rest of my life thanks to the people and places I get to see and go with hunting and fishing. Unlike the usual hunting trip, coming to Cape Cod means that we get to walk the oldest footsteps in the history of our country.
